True American BBQ has its roots in the South, but its popularity has grown over the years and now has branches that reach far and wide.
Old school" BBQ is when you put a large cut of meat or ribs in a closed pan and let it cook indirectly (away from the fire) at low heat and smoke from a charcoal or wood fire.
Each region has its own style and definition of good "Q".
